Overnight Oats ~ Breakfast

Breakfast option ~~ Overnight Oats.


Ingredients
=========

• 1/2 cup oats
• 3/4 cup almond milk, unsweetened (or any NON-Dairy milk: Almond, Coconut, Rice, etc.)
• 1 tsp maple syrup
• 1 tsp pure vanilla extract


the NIGHT BEFORE: ---

Directions
========

Add all ingredients to a glass or any container with a tight lid, stir and then refrigerate overnight,
~~>>>When you are ready to eat, then add any type of fruit such as: Bananas, raisins berries, coconut flakes, etc.

*If too thick then add some more non-dairy milk, or a little bit of Agave or Honey.


Are there any Fast Food Places that have Vegan options?


Yes, there is always Salad. 
(Remember always ditch the creamy salad dressings & just stick with Vinaigrette.)

But are there other options?
Well, yes....
If you are in a crunch & need to eat & are surrounded by fast-food places... 

Then listed below are some vegan options.

As a Vegan, I will always recommend home-cooked meals versus purchasing fast-food outside.  

So, please note I'm not promoting places listed below.   Just giving you some food options in case you are out & about, fainting from hunger, & are about to eat a "chicken" or "burger".  


  • Pizza Hut : Veggie Lovers Pizza  (just make sure they don't put cheese or butter on it)

  • Domino's: also has a Veggie pizza and they offer a gluten free crust as well.

  • Chipotle's:  Sofritas (an excellent option) tastes Very good and won't disappoint, you can have this in a burrito or salad bowl with some brown rice, veggies, and salad 

  • Jamba Juiceall Smoothies VEGAN & now they have an Apple Cinnamon Pretzel that is VEGAN (if you have sweet tooth - it's satisfying)

  • Denny'sVeggie Burger - NO MAYO and NO Cheese.

  • Wendy'sGarden Side Salad, Baked Potato (no cheese, sour cream, or butter)

  • Taco BellBlack Bean Burrito with NO CHEESE OR SOUR CREAM, also has cinnamon twists, chips and guacomole (Or pico de gallo), rice, black or refried beans, and Mexican rice, and their salsas are vegan.

  • Applebee's: Strawberry & Avocado Salad (NO Chicken) - comes with a zesty chili-lime vinaigrette 

  • IHOP: Hash Browns, Fresh fruit, Sauteed spinach & mushrooms, grits, plain baked potato, Salad (raspberry vinaigrette or light Italian dressing)

  • Jack in the Box: black beans, potato wedges, Curly fries, breakfast blueberry muffin oatmeal

  • Johnny Rockets: has a Vegan Boca Burger (The Streamliner) with grilled onions, lettuce, tomatoes, pickles, and mustard 

  • Papa John's, Little Caesars, & Pizza Hut all use vegan marinara sauce and the pizza crusts are vegan  - always NO CHEESE, instead add vegetable toppings

  • Noodles & Company have 5 different vegan dishes you can choose from

  • Subway's: Veggie Delite (on Italian Bread with NO CHEESE OR MAYO)

Breakfast on the go!

Rushing out the door? Need to catch the train or bus? 
Well, have quick tasty and nutritious breakfast on the go!

Grab a small container and throw in: 
One banana, one scoop of peanut butter ((all natural peanuts with peanuts as the only ingredient)),
Some raisins, and granola! 

This is a Healthy breakfast that will fill you up and you can avoid that bagel or muffin!


Bananas - "are a very good source of vitamin B6 and a good source of manganese, vitamin C, potassium, dietary fiber, potassium, biotin, and copper."

Raisins - "are dried grapes/currants. However, unlike fresh grapes, they indeed are rich and concentrated sources of energy, vitamins, electrolytes, and minerals. In addition, they are packed with several health benefiting poly phenolics anti-oxidants, dietary fiber, and other phyto-nutrients."

Natural Peanut Butter - "are high in protein, low carb, cholestrol free, vegan, gluten-free, non-GMO and Kosher."

Bluenanaberry Smoothie

*10+ Frozen Blueberries
*1 1/2 Frozen Banana
*6 Frozen Strawberries
*1c O.S. Cranberry Pomegranate
*1/2 c Low-fat yogurt
*Dash Pink Himalayan Salt
*1Tbls Raw Honey
*1/4 Tsp Cinnamon
*1/2 Tsp Vanilla Extract
*1 Tbls Artichoke Vitae Plus
  • Place all ingredients in Ninja Blender
  • Pulse 3-4 times 
  • Blend on High about a minute or until smooth consistency
  • Pour in tall glass or two if sharing
**Makes about 24 ozs

Rosemary Olive Oil Crusted Tofu

*Granissimo by GoGoQuinoa
-1c of grains cooked in 2 & 3/4c of water or your favorite Broth. (following instructions on bag)
**Serves 4-6**
---------Crusted Tofu---------
*1 bag Rosemary Olive Oil Potato Chips (crushed fine)
*1 14oz Extra Firm Tofu (sliced lengthwise 8pcs
*Salt
*Pepper
*Sazon with Saffron
*Whole Wheat Flour
*1 beaten egg & Almond Milk
*Grapeseed Oil
*Non Stick Skilled/Pan
--Pat dry the Tofu Slices
--Season with salt, pepper, and Sazon( keep in mind chips are salted)
--Dip Tofu in WW flour, then dip in
--Egg mixture, then dip in
--Crushed Potatoe Chips
--Place in heated pan med-high
--Turn once.
--------------------------
--Serve a portion of Granissimo
--2 slices if Crusted Tufu

OatChiFlax

*1/2 c Old Fashioned Oats
*1c Water
*Pinch Himalayan Pink Salt
*1Tbl Chia Seed
*1Tbls Flax Seed
*1/4 Tsp Cinnamon
*1Tbls Honey or Maple Syrup or Algave
--Place all of the above in medium saucepan, bring to a boil and lower to med-low for liquid to dissolve.
--Stirring occasionally for non sticking on bottom.
--Up to 5 minutes or until cooked.
--Shut off and let sit a few minutes covered.
--Place in serving dish.
--Garnish with Trail Mix or fresh fruit...(endless options..make it to your liking), drizzle again with Honey.

Cauliflower -Back to Basics

*Fresh cut Cauliflower buds
*Double Boiler with boiling water
-Bring water to a boil
-Cut cauliflower buds approximately same size
-Place on top layer of pan
-Cover answer and cook until knife tender or crisp tender
-Remove from heat and transfer to a dish, add Himalayan Fresh Ground Pink Salt
-Fresh Ground Peppercorn
-Drizzle with Extra Virgin Olive Oil

Refreshing Summer Salad

**Baby lettuce (Spring Mix)
**Arugula Leaves
**1 Mini Sliced Cucumber
**1 Tbsp Dried Cranberries
**1Tbsp Walnuts
**1 oz Feta Crumbled Cheese
**Croutons
**2 Tbsp Raspberry Vinegrette Dressing
--Layer to your liking and drizzle with dressing.

Quinoa A La Maggie & Steamed Fried Sweet Potato!

Quinoa A La Maggie

*Veggie Broth Quinoa
*Sauteed Onions & Tomatoes
*Sauteed Garlic Tofu
---Mix all 3
ENJOY LIFE!!

Steam Fried Sweet Potato

*1 Med/lg Sweet Potato (Root Vegetable that has a  Pink to Dark Purple skin color)
*4 Tbs Grapeseed Oil
*Himalayan Pink Salt
* Fresh Ground Peppercorn
--Peel Sweet Potato and cut sort of thick as if making Fries
--Heat pan and Grapeseed Oil then place Sweet Potato in pan
--Add Salt & Peppercorn and cover
--Let cook med/low stirring every 3-5 minutes until tender, crispy and brown edges. Total time approx 15 minutes.

Sauteed Garlic Tofu

* 14 oz Extra Firm Tofu (remove from water, place in drainer overnight or a few hours)
Dice in cubes about an inch
*2 crushed Garlic gloves
* Himalayan Pink Salt
* Fresh Ground Peppercorn
* 2Tbs Grapeseed Oil
* 1 packet of Sazon with Saffron
  • Place diced Tofu, crushed garlic,salt & pepper in bowl and toss gently to coat evenly.
  • Heat Grapeseed Oil in non-stick skillet.
  • Medium High heat and then place Tofu mix.
  • Cook 5-7 minutes, stir carefully occasionally to brown sides.

Sauteed Onions

*1/2 med/lg Yellow Onion sliced lenghthwise
* 1 Tbs Grapeseed Oil
*6 Grape Tomatoes cut in half lenghthwise
*Himalayan Pink Salt
*Fresh Ground Peppercorn
--Heat Grapeseed Oil in non-stick skillet
--Place onions stir, add salt & pepper. Just 3 minutes
--Add Grape Tomatoes and cook additional 3 minutes

Veggie Broth Quinoa

*1/2c Quinoa
*2c Manischewitz Vegetable Broth
*Dash Himalayan Pink Salt
*Fresh Ground Peppercorn
*1 Sliced Med/Lg Carrot
--Place Quinoa in medium large saucepan and let toast 3-5 min.
--Add Veggie Broth
--Bring to a boil and lower heat to a simmer
--10-15 minutes into boiling  process add carrot slices
--Let cook additional 10-15 minutes until all liquid has been absorbed.
